Turkey or Chicken Reuben
1/2 cup House-Autry Chicken Breader
4 thinly sliced turkey cutlets
1/4 cup vegetable oil
6 tbsp Thousand Island salad dressing
12 slices rye pumpernickel bread
6 slices Swiss cheese
1 16-ounce can sauerkraut, drained
Butter flavored nonstick cooking spray
Moisten turkey cutlets and dredge on both sides in House-Autry Chicken Breader. Place skillet on stove and turn heat to medium-high. Add oil. Add cutlets and cook on each side until golden brown (about 8 minutes total, depending on size of cutlets). Remove from pan and set aside. Wipe out pan with a paper towel.
Spread 1 tablespoon of dressing over each of 6 bread slices. Top with cheese, sauerkraut and a turkey cutlet. Top with remaining bread slices. Spray skillet with nonstick cooking spray; place sandwiches in skillet. Cook uncovered over medium heat, about 3 minutes. Turn; cook about 3 minutes longer until cheese has melted.
